The southwest corner of Oregon is remote, foggy, beautiful and empty. And in this somewhat unpropitious place an independent-minded group of farmers grows very good cranberries. We bring the cranberries from that far corner of our state, crush them, and soak them in our own house-made distillation of Oregon wine. After several months of this (maceration it is called) the resulting liquid is a thick, brilliantly colored, tart, raw cranberry liqueur. Then we tidy up a bit.
