Novo Fogo Silver Organic Cachaça is rested 1 year in stainless steel tanks. Handcrafted and pot distilled in tiny batches from sugar cane grown on the edge of Brazil’s Atlantic Rainforest. Lime blossom aromas, followed by the savory but slightly kicky taste of sweet red peppers, citrus, and sea salt. The natural can origin revives cleanly in the finish. This spirit begs to meet fresh fruit.








Novo Fogo Gold Organic Cachaça is aged 2 years in repurposed American Oak bourbon cask barrels. Handcrafted and pot distilled in tiny batches from sugar cane grown on the edge of Brazil’s Atlantic Rainforest. Aromas of toffee and vanilla will welcome you before the mature taste will remind you of brioche, honeycomb, and apple pie. The oak barrels show their influence in the smooth finish. In the United States, Cachaça is not legally recognized as its own spirit, but rather as a Brazilian rum. Rum and cachaça are quite different. Whereas rum is made from molasses, a byproduct of sugar cane when processing into sugar, Cachaça is actually made from the juice of unrefined sugar cane.

Every successful liquor entrepreneur assembles the team that shares the same vision. Dragos and Emily partnered with experienced Brasilian entrepreneurs led by Curitiba’s Fulgencio Torres Viruel and counting Novo Fogo’s master distiller, Professor Agenor Maccari Jr., Phd aka “Dr. Cachaça”.


Who is Dr. Cachaça? Professor Agenor Maccari Jr. has studied every component of the Cachaça production, from the genetic selection of sugar cane, to the fermentation process, and the wood aging. He is particulary fond of studying the aging process in native Brasilian woods, and his research lab features aging barrels made from dozens of wood types.


His devotion to the study of Cachaça has earned him a highly-recognized reputation in an industry that features thousands of producers. Many pot-still distilleries or alambiques seek his advice.


Since 1993, his studies have focused on Cachaça while completing a graduate degree in Cachaça Agronomy from Universidade Federal do Parana (UFPR) in Curitiba. Today, Dr. Cachaça divides his time teaching and researching at UFPR, working at the distillery producing the Novo Fogo Organic Cachaça, and driving the cachaça industry to adopt organic production by educating consumers and distillers the benefits of handcrafted, organic drink spirits.

Hand Labeled – Every bottle is hand signed specifying the bottling year, actual day of the year, and initials of bottler. For example, we were sent Silver Cachaça with a batch no. L9321 (bottled in 2009 on the 321st day of the year) signed by AC and Gold Cachaça with a batch no. L9328 (bottled in 2009 on the 328th day of the year) signed by CRS.


USDA Organic – Obtaining this certification is one of the most difficult and time consuming organic certifications in the world. It shows Novo Fogo has taken the time to make sure their cachaca is the most pure without any chemicals. The USDA organic certification is on the label. Also, it is certified organic by Brazil’s Ecocert SA.

Pot Still Distilled - Novo Fogo Cachaça is made from sugar cane stalks, pressed for their juice shortly after harvest, then fermented and distilled in tiny batches. The head and tail of every batch are separated and used as fuel for the distillery cars, creating one of the “purest quality and zero-waste” production facilities in the world.






 

COCKTAILS

The Caipirinha is the most famous drink in the world using cachaça. It is one of the fastest growing cocktails in the USA.

 



 

 

Caipirinha [ky-pee-ree-nyah]

1. cut up a lime in wedges, toss into rocks glass, muddle them with 1.5 tbsp sugar in glass

2. fill glass with ice, add 2 oz. of Novo Fogo Cachaça Silver

3. pour everything into shaker and give it a go, pour EVERYTHING back into glass

4. add two colorful short straws to the glass, you drink, you like

 

 

 

 

 

 

 

Cacharita [kah-sha-ree-tah]

1. tall glass, fill with ice, pour 1 oz Novo Fogo Gold Cachaça over ice

2. pour 1/4 oz sweetened lime juice, pour 2 oz sweet & sour mix

3. stir it good…

4. top with 1/2 oz grand marnier or cointreau, garnish with slices of lime and orange,

5. stick 2 thin staws in it, drink it before others will
