Making Novo Fogo Organic Cachaça
How do you make organic cachaça? We’ll let the doctor tell you. The guy in the white coat, that’s Dr. Cachaça. Cachaça is made from sugar cane stalks, pressed for their juices shortly after harvest, then fermented and distilled. As the third largest spirit category in the world, it ranks ahead of whiskey, rum, gin, and tequila, and it is now making a dash for the hearts of the North American consumers.


The Novo Fogo brand means the New Fire and it is produced in small batches through hand processing and copper pot still distillation. It is also USDA Organic Certified, which means that it does not have any chemicals applied during the entire production process.
The Novo Fogo distillery is built right in the slope of the hill, so that the force of gravity is used to move the cachaça from room to room. Other distilleries use motorized air pumps that can bring dust particles into the liquor.
The Novo Fogo Organic Cachaça bottle is handcrafted from glass collected and recycled from the streets near the distillery. It takes 5 people to craft each bottle–so you are supporting many jobs in small towns of Brazil.
Only the heart of the distillation is kept, making this cachaça some of the most exquisite in the world. The head and tail distillate are used to run the automobiles for cars at the distillery whereas other corporate distilleries in the other parts of the world actually throw the head and tail down the drain or worse, they just bottle it.
